European Pork and Mushroom Salpicao

Ingredients

  • 500 g pork secreto, sliced into bite-sized pieces
  • 250 g mushrooms, sliced
  • 5 cloves garlic, minced
  • 1 small red onion, chopped
  • 1 red bell pepper, sliced
  • 3 tbsp olive oil
  • 3 tbsp soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tsp black pepper
  • Fresh parsley, chopped (for garnish) 

Preparation 

  1. Heat the Oil in a large pan, heat the olive oil over medium-high heat. 
  1. Add minced garlic and chopped red onion. Sauté until fragrant and lightly golden. 
  1. Add the sliced mushrooms and cook until softened and lightly browned. 
  1. Add the pork secreto pieces to the pan. Cook until browned on all sides and cooked through. 
  1. Pour in the soy sauce and Worcestershire sauce. Add black pepper and stir well to combine. Allow the sauce to slightly reduce and coat the meat evenly. 
  1. Add the sliced red bell pepper and cook for an additional 2 minutes, keeping it slightly crisp. Taste and adjust seasoning, garnish with freshly chopped parsley before serving.
